Matcha Sugar Cookie Recipe
Sweet and a little savory, with a rich green color, these festive sugar cookies are matcha-ly delicious! We recommend pairing them with a pot of Organic Irish Breakfast Black Tea for a simple St Patrick’s Day tea.
Makes 24 cookies
Ingredients
- 2 cups all-purpose flour
- 2 TBS Organic Matcha Green Tea Cooking Grade
- ½ tsp baking soda
- ½ tsp salt
- 1 cup sugar
- ¾ cup unsalted butter, softened to room temperature
- 1 TBS vanilla extract
- 1 egg
Directions
- Preheat oven to 325 degrees F.
- Grease baking sheets or line with parchment paper.
- Sift flour, matcha, baking soda and salt together in a bowl. Set aside.
- Beat sugar and butter together in a large bowl using an electric mixer until blended; beat in vanilla extract and egg until light and creamy.
- Gently mix flour mixture into creamed butter until dough is just blended.
- For cut out cookies, cover the dough with plastic wrap and refrigerate for at least one hour. Once dough is chilled, roll it out on a floured surface to ¼” thick and use your favorite cookie cutter shapes to cut out the dough. Place cut dough 1-2 inches apart on the prepared cookie sheets. Repeat until all the dough is used.
- For drop cookies, use 1 heaping tablespoon of dough per cookie and drop onto the prepared cookie sheet 2 to 3 inches apart.
- Bake for 8 to 10 minutes, or until edges are lightly browned.
- Allow cookies to cool on the baking sheet for 3 minutes then transfer to a rack to cool completely.
